My holiday spirit is very activated this season! During the month of October, I spent a lot of time with my friends taking in many opportunities to enjoy the fall season. My friend Krystal and I made glitter pumpkins to spruce up our fall home decor. With a group of friends we also went to Harvest Nights which is a Halloween themed light show at the art museum. It was so cute and some parts were spooky. I loved the talking pumpkin that greets you when you first come in. I also loved all the colorful pumpkins on display in the beginning and end. Finally, I went to my first haunted house at Hannah Haunted Acres and it was definitely terrifying. I did not know that the actors would follow you around and even out of the building! I’m looking forward to trying more spooky adventures next year.

Now, its the beginning of November and everyone is looking forward to Thanksgiving. It is going to be new experience this year due to all the changes that taken plac in 2020. However, there is still plenty to be grateful for and taking the opportunity to appreciate your family, friends, and loved ones is very necessary this year.

One of the challenges that is very true is that weightloss is hard during the holidays. Many people worry about how to maintain a healthy diet when there are so many parties and get togethers that are usually centered around one thing: all the foods you love to eat. Well, you don’t have to worry because I am going to share with you some healthy holiday recipes to take some of the stress away so that you can enjoy your meals and family time.

Today, I am sharing with you this yummy light broccoli casserole that is great for any holiday gathering from Thanksgiving to Easter. This guilt free broccoli casserole is less than 200 calories and is 21g of carbs per serving. The ingredients are simple and the process is fairly quick compared to the different baking recipes I’ve tried. This casserole is great as a side dish or you can eat it alone. I paired it with a Caesar salad and was able to pack it for lunch a few days.

Broccoli Quinoa Casserole

Ingredients

  • 2 10oz packages of chopped broccoli

  • 1 1/2 cups of cooked and cooled quinoa

  • 3 eggs

  • 1 cup low-fat cottage cheese

  • 3 tbsp flour

  • salt and pepper to taste

  • shredded parmesan

Instructions

  1. Preheat oven to 350 degrees. Spray a 2 quart casserole dish with cooking spray

  2. Heat broccoli following package instructions

  3. While broccoli is warming, beat eggs, add cooked quinoa, cottage cheese, and flour. Season with salt and pepper.

  4. Once the broccoli is finished, drain it, and fold the broccoli into the quinoa mixture. Scoop the mixture into the casserole dish.

  5. Bake in over for 30-35 minutes. Sprinkle parmesan on top during the last 5 minutes of baking.
